Enjoy trendy bagels at home
Ingredients (for 2 people)
| Strong flour | 250g |
| rice flour | 50g |
| cane sugar | 20g |
| salt | 4g |
| sake lees | 40g |
| stewed tomatoes | 150g |
| Lukewarm water | 10ml (needs fine adjustment) |
| dry yeast | 3g |
| honey | 1 tablespoon |
How to make it
1. Grate the tomatoes and simmer in a pot until all the water has evaporated.
② Put the bread flour, rice flour, salt, brown sugar, sake lees, dry yeast, ①, and lukewarm water into a bowl and knead.
3. Knead for about 10 minutes until smooth, then divide into 4 equal parts using a scraper and roll with the cut side facing down and the top side facing up.
④ Cover with a tightly wrung out wet cloth and let it rest for about 15 minutes.
⑤ Place the clean side down and stretch it with a cotton swab, then roll it tightly from the bottom.
⑥ Once it is in a rod shape, join both ends together to make a circle. It will look neater if you place the seam at the bottom.
⑦ Cover with a damp cloth again and let it rest for about 30 minutes.
8. Boil water in a frying pan so that it covers half of the dough, add the honey, bring to a boil, then reduce the heat to low and boil each side for 30 seconds. Meanwhile, preheat the oven to 200°C.
⑨Bake in the oven for about 20 minutes and it's done.
*Can be substituted with canned tomatoes.
*You can add more brown sugar or herbs to taste.
