Ingredients (for 6 people)

How to make it

1. Lightly sprinkle salt and pepper on the beef rib block and leave it for at least 30 minutes. If possible, let it sit overnight.
② Peel the onion and insert 3 cloves, peel the carrot with a potato peeler and cut it into 4 equal parts lengthwise and into 4-5cm wide pieces, wash the celery thoroughly, peel the skin and veins and cut each into 4-5cm wide pieces.
Spring cabbage will fall apart when boiled, so cut it into 4cm wide wedges, including the core, and secure it in place with bamboo skewers if necessary.
3. If any moisture has come out of the beef belly block, wipe it off with kitchen paper, then put the beef belly, sausage, bacon and water in a pot and bring to a boil.
Once boiling, reduce heat to low, skim off the scum, add the onion, carrot, celery, crushed garlic, thyme, rosemary and bay leaf and simmer for about an hour.
4. Once the meat is tender, add the spring cabbage and rape blossoms and simmer for about 15 minutes.
⑤Add grated ginger to taste and season with salt and pepper.
⑥Cut the meat into bite-sized pieces and place the soup and ingredients on separate plates.
Finish with flu de sel or mustard.
*If you want to add potatoes, they will cloud the soup, so you can boil them separately and add them later, or cut them up and soak them in water to remove the starch before boiling them together. If you use May Queen potatoes, they will stay in the soup less likely to fall apart.
