Refreshing pickles

| Carrots | 1 large |
| Mirin | 100cc |
| water | 100cc |
| sugar | 1 tablespoon |
| salt | 2 teaspoons |
| vinegar | 100cc |
How to make it
1. Cut the carrots into thick slices using the Ninjin Sanmai method.
(You can also cut it into thin strips or split it in half, depending on your preference.)
② Put mirin and water in a pot and heat over medium heat for about 3 minutes.
The alcohol will dissipate and the taste will become smoother.
③ Add sugar and salt, boil until dissolved, then turn off the heat.
④ Once cooled, add the vinegar. The pickling vinegar is ready.
5. Place the carrots from step 1 into a boiled and sterilized storage jar and pour in the pickling vinegar.
⑥ Chill in the refrigerator for a few hours and it's done.
*If you like, you can also add bay leaves, peppercorns, and chili peppers to add a nice flavor accent.
