Slightly sweet and chewy gnocchi made with sweet potatoes
Ingredients (for 6 people)
| sweet potato | 250g |
| Strong flour | 85g |
| Whole eggs | 1 piece |
| salt | 2.5g |
| fresh cream | 100ml |
| butter | 5g |
| powdered cheese | 5g |
| black pepper | Appropriate amount |
How to make it
1. Peel the sweet potato skin with a root vegetable frill salad shavings .
②Steam the sweet potatoes in a steamer until a bamboo skewer can be inserted easily.
3. Place a colander over a bowl and strain the sweet potatoes while they are still hot.
④ Add salt and bread flour to bowl 3 and roughly mix in the seeds. Once it has combined to a certain extent, add the whole egg and mix further.
⑤ Roll each seed into a ball about 5g in size and boil it in boiling water.
*The gnocchi are ready when they float to the top.
⑥ Add the cream, gnocchi, butter and salt to a frying pan and bring to a gentle simmer.
7. Add cheese to finish and when the sauce becomes thick it's ready.
8. Place in a serving dish and garnish with extra powdered cheese and black pepper.
Key points of sweet potato gnocchi
If you make a large amount, you can freeze it.
You can also add seasonal vegetables.
