Zucchini noodles are the star!
Ingredients (for 4 people)

How to make it

1. Bring the beef brisket block to room temperature, cut it into 2-3cm cubes, and season with salt and pepper.
②Add olive oil to a frying pan and cook the meat over high heat until browned on all sides.
3. Remove the meat and add the red wine to a frying pan and heat it. Simmer while scraping off any umami that has stuck to the bottom with a wooden spatula. The red wine is ready when it thickens.
④ Finely chop the garlic, onion, celery, and carrot. Peel the carrot skin with a root vegetable frill salad shavings .
5. Add olive oil and garlic to a frying pan and heat over low heat to infuse the aroma.
When the garlic starts to turn lightly golden brown, add the onion, carrot, and celery and continue to fry over low heat. At this point, sprinkle a little salt (not included in the ingredients) to help the frying go faster.
⑥The vegetables are ready when all the moisture has evaporated and they have turned caramelized all over.
⑦ Put the meat from ②, ③, ⑤, the canned tomatoes, bay leaf, rosemary, brown sugar, and enough water to cover the ingredients into a deep pot, and simmer over low heat, stirring occasionally, until the liquid has evaporated.
9. When the liquid has evaporated, turn off the heat and season with salt.
10. Peel the tomatoes with a tomato peeler , cut them into 2-3cm cubes, and sprinkle with salt (not included in the recipe).
11. Put the shaved zucchini into a frying pan, add the sauce from 9 and butter, heat quickly, season and serve on a plate. Sprinkle with tomatoes, pepper and cheese and it's done.
