Ingredients (for 15 people)

How to make it
1. Put the potatoes and water in a pot and boil over medium heat until a bamboo skewer can be pierced. Once boiling is done, drain in a colander and once cooled, peel the potatoes.
Mash the potatoes in a large bowl with the butter and 8g of salt. Cover with plastic wrap to prevent them from drying out.
② Finely chop the onion and fry in olive oil until golden brown. Sprinkle with salt halfway through and fry until golden brown.
Once done, mix with ①.
3. Shred the cabbage using a Super Light cabbage peeler , sprinkle with salt and rub well.
4. Cut the zucchini into 2cm slices, sprinkle with olive oil and salt, and fry on both sides in a frying pan until cooked through.
5. Add the room temperature butter and flour to a pot and fry over low heat until glossy (roux). Remove the pot from the heat and let the temperature drop.
Heat the milk to body temperature, pour it all at once into the cooled roux, add 5g of salt and nutmeg, and continue to mix over medium heat without stopping.
Once it thickens, add ③. The water from the cabbage will make it runny, so make sure to remove the water thoroughly and continue kneading until it thickens.
At this point, the saltiness will be diluted by the addition of the cabbage, so add more salt to season.
⑥ Add the minced meat, chopped rosemary leaves, 2.4g of salt, and black pepper to a bowl and mix well.
Add the minced meat to the frying pan, mashing it up and browning it evenly on both sides. Break it up as you go, making sure to brown it all over.
Add more oil if necessary, being careful not to burn it. Once browned, mix with ①.
*At this point, make sure you have cooked zucchini (④), white sauce with added cabbage (⑤), and mashed potatoes with added minced meat and onion (⑥).
7. Line a deep heat-resistant container with baking paper and make sure to cover the sides as well.
⑧ Arrange the zucchini in a heat-resistant container, spread the mashed potatoes in between them, and sprinkle cheese over the entire surface. Add the cabbage béchamel and spread it evenly.
Then layer cheese, mashed potatoes, cabbage béchamel, and cheese.
9. Preheat the oven to 200°C. Once the temperature has risen sufficiently, bake for about 30 minutes until the cheese is browned.
10. Once the surface is well browned and the inside is still hot, remove from the oven, cut into bite-sized pieces, and garnish with black pepper and parsley. It's done!

The ingredients are layered and baked, so if you don't carefully decide on the flavors for each of the mashed potatoes, cabbage béchamel, and zucchini, the dish will be bland when cooked and eaten.
Depending on the season, you can layer it with various vegetables in between.
