Vegetable panna cotta
Ingredients (for 4 people)
| fresh cream | 250ml |
| cane sugar | 50g |
| gelatin | 10g |
| milk | 150ml |
| New burdock | 150g |
| Brown sugar | 100g |
| water | 100g |
How to make it

①Soak the gelatin in ice water (not included in the recipe) for about 10 minutes to soften it.
2. Wash the burdock root and peel it using a shavings or shavings machine . Steam it in a steamer until soft.
3. Slice the steamed burdock root into 2mm slices and blend it with milk in a blender to make a paste.
4. Put the cream, brown sugar, and burdock paste into a pot and heat over medium heat until just before boiling, dissolving the brown sugar.
⑤Once the brown sugar has dissolved, add the softened gelatin and dissolve.
⑥Strain through a fine mesh colander and pour into a container.

⑦ Chill in the refrigerator until solidified and ready to serve. Pour brown sugar syrup over the top and enjoy!
*Brown sugar syrup: Dissolve brown sugar and water in a 1:1 ratio over heat. Once it thickens slightly, turn off the heat and let it cool.
*Making the burdock paste in a Vitamix will make it even smoother.
Key points of fresh burdock panna cotta
Because it is high in fiber, it may feel a bit rough when blended in a regular blender, but this is not a problem when eating it at home.
If you have a Vitamix, it will make the mixture super smooth, so I recommend it!
